Cooking with black truffles

I never thought I would have the chance to cook with fresh black truffles. What luck to be given this black truffle. I got it after about a week or so. I guess its aroma is not so strong anymore but there's still something about its taste and smell that is quite rich.

After the first meal, I weighed this remaining truffle - it was about 40g.
Storing it in the fridge, wrapped in paper napkin. Change daily.


Making do with Chinese spinach noodles because no spaghetti at home.
Some parmigiano cheese, spring onions and truffles. Salt and pepper. Mmmm ...

Spaghetti with some kailan stems, cherry tomatoes and truffles. Salt and pepper.

Someone said the truffle bits should not be wasted.

Mixed up the truffle bits with butter. For toast bread next time.

19 July 2017 Tried to make this French-style eggs, bain-marie method. Don't think I really achieved the 'signature curd-like texture' but the eggs with truffles still tasted good, and eggs are really good to show off the truffles.

20 July 2017 My truffle adventure ends with this dish. Well, sort of .. still have the truffle butter.

All in of the remainder of the truffle.

Spaghetti with cherry tomatoes, truffle, cheese and cucumber.

The last bits of the truffle in butter - added salt to the unsalted butter. Better.

Homemade Vinegar Chilli Sauce (cili cuka)

Homemade chilli sauce. Simple homemade chilli sauce, similar to the chilli sauce served with chicken rice. For blending: Red chillies - 10-15 Garlic - 5-7 cloves Ginger - 2inch For mixing: Vinegar - 50ml to start with, the chilli sauce should not be too watery, the sour, tangy taste should be there Sugar - 1.5-2 tbsp Salt - 1 tsp Unfortunately, in true homemade style, I learnt to make this from my mum without measurements. Just a sense of proportion that there should be more chilli than garlic and less of ginger. Of course, the vinegar, sugar and salt are similarly adjusted to taste. Too spicy - add salt, sugar. Too bland - add salt, vinegar. Just mixing all these ingredients together is sufficient, no cooking is required. The vinegar, sugar and salt are preservatives. Ti wan chye / Di huang miao

Update 26 Sep 2017 Ti wan chye or di huang miao or whatever you call it - this vegetable is very easy to plant. Just stick a cutting into the soil, water it and it should survive. Planted a few cuttings from my supermarket purchase in my prettiest pot! This photo was taken some time after. 31 May 2017 14 July 2017: Before first harvest.
