I recently discovered mini king oyster mushrooms. They are really nice, just stir fry with some oyster (the seafood kind!) sauce and crunchy greens.
I added some pasta to my dish for a full meal.

I saw this recipe for roasted (king) oyster mushrooms sometime ago and thought it was really easy and looks delicious.

Well, I finally bought the king oyster mushrooms but decided to saute it in the wok instead, and make it 'dry'. It's really easy, just cut the mushrooms, saute with some soya sauce. In a non-stick wok, you don't even need to add oil. There will be quite a bit of liquid from the mushroom after a while. Remove some of this liquid, otherwise it will take a very long time for the mushrooms to 'dry' up. Use the extra mushroom-soya-sauce liquid for other dishes later.
